Cheesy BBQ Meatloaf

I'm sick of socially distancing.

It's taking a huge toll on me mentally and physically.

By nature, I'm a social being who enjoys to be around the people I love. Zoom calls just aren't cutting it...ya know? Sam and I have even had to show our son to his grandparents through the door. It's hard and clearly, we're struggling a bit...

So many of you are ready and willing to open the world back up. You're out there fighting for your rights to be able to care for your family, and I can't be mad at that. In the meantime, Sam and I have been fighting a different battle. What do we do with a newborn? When does he get to meet people? If he WERE to be one of the "few" people to get the virus, how developed is his immune system and would he be able to fight it off? It hasn't been easy making so many BIG DECISIONS during a time when we already have the weight of an 11 lb baby in our arms.

We are eager to be around people just as much as the next person, but we've got to be a little more cautious, for the sake of our son.

So, while we continue to socially distance, we are blessed when the people who love us most respect that and make our lives with a newborn just a little more simplistic.

I've had so much time to get creative because we have not gone without a meal since the day we got home from the hospital. Before our son came, I made 8 meals that we froze in our second freezer. These meals were large enough to last us 2-3 meals each! *If you're pregnant, please do this for yourself! Your postpartum self will thank you 100 times over!*

Our other meals were thankfully supplied by friends and family who were keeping us in their thoughts and prayers during this time. This means, I've had a lot of planning time to getting creative with our meals and my posts again!

This meatloaf is a bit of a spin off of my original Ground Turkey Meatloaf. The cheesy deliciousness that you encounter in each bite is sure to make you want to add this to your weekly meals EVERY week, and the BBQ Sauce in and on top of the meatloaf adds a sweetness that cannot be beat! This meal is easy, can be frozen (for all you mamas), and pairs nicely with a vegetable and starch (we had potatoes and corn).

  2. Meatloaf can be made ahead of time and sit in the fridge for 24 hours before baking or for 1 month in the freezer (as long as meat was not previously frozen).
